This beautiful, refreshing and healthy shrimp salad is great for any occasion. I hope that you will enjoy it as much as my family, friends and I have.

Ingredients

1 lb shrimp, cooked & shelled 2 medium avocado, sliced 1/2 lb asparagus, blanched and sliced 2 medium Roma tomatoes, sliced 1 sm red onion, sliced 1/4 bunch cilantro, chopped 1/4 c Parmesan cheese, grated 1 pkg Italian blend salad mix VINAIGRETTE 1/3 c extra virgin olive oil, garlic flavored 2 Tbsp lemon juice, fresh 1/2 tsp oregano, dried 2 pinches cumin powder smoked sea salt & course black pepper to taste

Instructions

1. Combine all vinaigrette ingredients in a salad shaker. Mix well. 2. Gently toss salad ingredients in a large salad bowl. 3. Top with Parmesan cheese and drizzle salad with vinaigrette right before serving.
