Pulled Pork Sandwiches with Homemade BBQ Sauce

For the Pulled Pork Sandwiches: Large pork butt (bone-in) Onions - 3 or 4 medium-size Olive oil Garlic cloves Seasoning (I use Emeril) BBQ sauce* Buns of choice (hamburger, Kaiser) For the BBQ Sauce: 4 Tbs. vegetable oil 2 medium onions 4 garlic cloves 3 cups ketchup 1 cup cider vinegar ½ cup Worcestershire sauce ⅔ cup brown sugar 2 Tbs. chili powder 1 teaspoon. cayenne pepper

For the pulled pork: Cut onions into chunks and put in roasting pan. Rub pork with olive oil and sprinkle with seasoning until well-covered. Cut slits in roast and insert garlic cloves. Place roast on top of onions in roasting pan with fat side up. Roast at 450 degrees for 30 to 45 minutes until brown. Lower heat to 250 degrees and cook for 5 to 6 hours. Remove from oven and pull pork from bone. Stir in BBQ sauce* to taste and serve on buns. For the BBQ sauce: Blend all ingredients in food processor. Pour blended ingredients into a saucepan over medium heat until bubbling. Reduce heat and simmer, partially covered, until the sauce thickens slightly, about 20 minutes. Makes about 5 cups.
