Portobello Fajitas




3 Portobello Mushrooms 2 TBS Olive Oil Salt & Pepper to taste 8 Small Flour Tortillas ¼ Red Bell Pepper ¼ Yellow Bell Pepper 2 Avocados ¼ Cup Light Mayo 1 teaspoon Chili Powder Salsa Verde - to garnish Cilantro - to garnish

Brush 3 Portobello mushrooms and 1 quartered red & 1 quartered yellow bell peppers with 2 tbs olive oil. Sprinkle with salt and pepper. Stack 8 small flour tortillas and wrap in foil. Grill Portobellos, peppers, and tortilla packet directly over med heat 8 – 10 minutes, turning once halfway through. Meanwhile, in a bowl mash 1 avocado with ¼ cup light mayo, 1 teaspoon chili powder, and salt and pepper to taste. Slice 1 additional avocado. Cut grilled veggies into strips. Pile onto warm tortillas with sliced avocado, mashed avocado mayo, salsa verde and cilantro.
