Talk about an easy and delicious dinner in just over 30 mintues. This is a play on what we call "lazy chicken enchilada's". It's so simple, yet taste's like you spent all day preparing it!!!
2 Large Cans Chunk Chicken
1 Can Cream of Chicken soup
½ cup green taco sauce
1 samll onion, diced
1 can stewed tomatoes
1 cup shredded cheddar cheese
1 cup shredded monterey jack cheese
16 corn tortillas
vegetable oil as needed

Lightly fry each tortilla just until soft, drain in paper towels, cut each in quarters and set aside.
Mix the chicken, tomatoes, soup and taco sauce. Season with salt and pepper to taste.
Spray a 9 x 13 pan with non-stick cooking spray.
Heat oven to 350 degrees.
Take ½ of your tortilla's and line the bottom of the pan. Try no to leave any uncovered spaces.
Layer ½ of the chicken mixture over totillas.
Sprinkle with ½ of the diced onion.
sprinkle ½ of each cheese over mixture.
Cover mixture with remaining tortillas.
Layer the remianing chicken mixture over tortillas.
Sprinkle the last of the onion and cheese's.
Bake at 350 degrees about 30 minutes until bubbly!!
