An unusual and yet delicious approach to meatloaf from my Italian mother in law who unfortunately just passed away on april 22nd. The ketchup and water combination make a tasty "sauce" she was a FABULOUS cook, may she rest in peace!!
1 lb ground beef (85% lean)
1 lb ground veal
1 cup chopped onion
1½ c italian style bread crumbs
1½ c grated parmesan cheese
1 T mustard powder
1 red bell pepper, sliced
1 pkg button mushrooms, sliced
1 large sweet onion, sliced
2 cups of heinz ketchup
1 cup of water

Mix first seven ingredients and form into a "brick."
Brown on all sides including ends (will need support) in a large frying pan with ½" of good quality olive oil. Once browned, mix the ketchup with the water and pour over and around, add the red bell pepper, mushrooms and sweet onions. Cover and simmer for 45 minutes.
Serve with mashed potatoes....YUMMY!
