Mom’s Shrimp and Grits

A warm meal of shrimp and barely grits with some prosciutto for an interesting flavor. You can use regular corn grits .




2 tablespoons extra virgin olive oil 2 cloves garlic minced 1 tablespoon minced wide leaf parsley 1 tablespoon chopped fresh lemon basil 1 teaspoon dried chervil 1 cup red onion diced 1 medium red bell pepper diced ¾ cup barley grits cooked as package directs (you can use regular grits if you wish) 3 pieces of prosciutto diced 1 pound large shrimp peeled and deveined 1 tablespoon butter ½ cup parmesan cheese 1½ cups shredded pepper jack cheese

1. Preheat oven to 400 degrees. 2. Heat olive oil in large sauce pan over medium high heat. 3. Add next 6 ingredients sauté until onion and pepper begins to soften about four minutes. Fold in hot cooked girts, prosciutto and shrimp. Grease 13x9x2 baking dish with butter, transfer grit mixture to baking dish. Bake uncovered for 10 minutes. 4. Stir in cheese and sprinkle with parmesan return to oven for additional 10 minutes or until cheese melts and begins to bubble.
