A tasty sandwich with unique olive mayonnaise makes this Mediterranean wrap a winner. Serve with a bowl of chilly gazpacho for a complete summer dinner.
¾ cup mayonnaise
½ cup Kalamata olives, pitted
2 TBSP capers, drained
1 TBSP lemon juice
1 -2 cloves garlic
4 10 inch white or whole-wheat flour tortillas
Thinly sliced Turkey – enough for sandwiches wraps
Lettuce leaves, washed and dried
1 ripe red tomato, diced
1 small cucumber, diced
Salt & pepper, to taste

(This recipe requires a Cuisinart Food Processor Attachment on the Stand Mixer). Prepare Olive Mayonnaise as follows: Mix mayonnaise, pitted olives, capers, lemon juice and garlic together in a Cuisinart food processor attached to the Stand Mixer and whiz together until smooth.
Layer prepared mayonnaise on four tortillas. Build each sandwich using lettuce leaves, turkey, diced tomatoes, diced cucumber and crumbled feta, in that order onto the prepared tortillas. Season sandwiches with salt and pepper. Wrap tortillas up tightly, folding the ends in as you wrap. Cut in half and serve.
