A fantastic creative way to serve pork!
5-6 depending upon size
1 bunch green onion
¼ c red onion
5 cloves garlic
2 Tbsp molasses
2 Tbsp veg. oil
½ teaspoon allspice
1 teaspoon salt
2 teaspoon ground black pepper
5 jalapeno peppers, stems removed.
Ciabatta rolls for serving
1 pork loin roast - 3 to 4 pounds

Place all ingredients for Jamaican seasoning into the food processor and pulse until blended - about one minute. Reserve ⅓ marinade.
Pour mixture over pork loin roast and place in plastic bag to marinate a minimum of two hours or up to 12.
Heat oven to 375 and roast pork until internal temperature is 160. Let rest 15 minutes. After the 15 minutes, slice pork into thin slices - about ¼ inch.
While pork is resting, toast ciabatta rolls. Mix the reserved marinade with 3 Tbsp mayonnaise and spread on bottom of split, toasted ciabatta rolls.
Layer sandwich with spread, roast pork, gouda cheese, tomato then lettuce.
