Hominy Curry - Indian Style

A curry made with Hominy as the main ingredient with Indian spices.

Ingredients: 1 can (822 grams) of Mexican style hominy 1 large onion, finely chopped ½ inch grated ginger 1 teaspoon. mustard seeds ½ teaspoon. turmeric 4 green chilies, sliced 1 teaspoon. salt 1 teaspoon. curry powder 1 large tomato, finely sliced 1 teaspoon. plain yogurt 2 teaspoon. coconut powder 1 teaspoon. coriander powder 3 teaspoon. olive oil 1 cup of water 1 teaspoon. sugar or Splenda

In a deep frying pan, heat the oil. When oil is hot, add mustard seeds, ginger and chilies. When the mixture is fried (less than a minute), add onions, sauté the onions till they are golden brown, add turmeric, salt and curry powder. Add tomato and stir constantly till the tomatoes are cooked and oil separates. Add coconut, coriander powder and yogurt and mix thoroughly. Add sugar (or Splenda). Add the can of Hominy, water and cover the pan with a lid, lower the heat and let the mixture cook for 10 to 15 minutes or till the hominy are well done and oil seperates. Serve while hot—goes well with rice, bread, or pita pockets.
