Holy Guacamole Burgers

It's a burger, it's a quesadilla, it's delicious.




Burgers: 1.5 pounds ground beef 1 heaping tablespoon reduced sodium taco seasoning Salsa ¼ of a red onion 10 grape tomatoes 10 pickled jalapeno Guacamole: 1 avocado ¼ of an onion 2 tablespoons cilantro 1 lime juiced Salt and pepper Additional ingredients 4 burrito size tortillas 4 slices bacon, cut in half and cooked until brown and crisp 4 slices chipotle cheddar cheese (Sargento makes this), cut in half 4 slices pepper jack cheese, cut in half Shredded romaine lettuce Vegetable cooking spray

Burgers Mix ground beef with taco seasoning, and form into 4 patties, grill patties to desired doneness. Salsa Finely chop the onion, tomatoes, and jalapeno, and mix together to make salsa Guacamole Chop cilantro, and onion, add to a bowl. Peel, and pit the avocado, and mash with cilantro and onion. Juice lime over avocado, onion and cilantro. Salt and Pepper to taste and mix. Assemble Burgers by: On a tortilla, place ½ slice pepper jack cheese, top with 1 slice cooked bacon cut in half. Top bacon with the heaping tablespoon salsa. Top salsa with burger, and spread a tablespoon of guacamole on the burger. Top that with ½ slice of chipotle cheddar, and shredded lettuce. Fold in all sides of tortilla to cover and make a pocket. Heat a skillet, and spray with vegetable oil spray. Brown each side of tortilla like a quesadilla. Cut in half, and serve immediately.
