These chicken drumsticks have a fresh taste from freshly ground herbs and garlic. They are absolutely out of this world.
Ingredients
5 chicken drumsticks
3 garlic cloves
juice of half a lemon
1 teaspoon salt
¼ teaspoon cayenne pepper
Herbs: ½ bunch fresh oregano, ½ bunch fresh thyme, ½ bunch of fresh parsley
For butter sauce: 1 table spoon unsalted butter, juice of ½ lemon

Instructions
1. Grind herbs with garlic cloves, lemon juice, salt, cayenne pepper in a food processor to a paste consistency. Put aside ⅓ paste mixture for finishing sauce.
2. Preheat the oven on broiler setting.
3. Lay chicken drumsticks on a flat surface and spoon some herb mixture under skin of each drumstick. Grease a large rimmed baking tray with oil and lay chicken pieces skin side up. Place the tray on the top third rack of your oven. Roast for 10 minutes on one side, then flip and roast for 10 minutes on another side until skin looks golden brown. Transfer chicken out on a plate.
4. Collect all the chicken drippings into a small pot, add butter sauce and reserved herb mixture and heat over medium heat. Smother chicken in the sauce, cover the lid and cook for another 5 minutes for flavors to blend.
