3 lb chicken pieces, washed and dried
½ cup olive oil
Juice of 2 lemons (fresh is best)
1 teaspoon dried oregano
2 cloves of garlic, minced
Salt and pepper to taste
Mix oil, lemon juice, oregano, minced garlic and salt and pepper. Pour over chicken. Marinade for at least 2 hours. An indirect grilling method it best in using a gas or charcoal grill or place on a water soaked cedar board if placing directly on the grill grate over fire. Make sure grill cover is pulled down during duration of the cooking.
