A luscious vegan stir fry that is as flavorful as it is colorful. Very healthy.
1 pkg firm tofu, drained
1½ t peanut oil
2 red bell peppers, sliced into thin strips
4 minced garlic cloves
1 t fresh chopped ginger
1 teaspoon crushed red pepper flakes
2 t water
1 bunch green onions, chopped
1 t soy sauce
1 t sesame oil
crushed salted peanuts to garnish Cooked rice noodles

Cut tofu into ½ inch cubes & set aside.
Heat peanut oil in large skillet or wok over medium high heat. Add peppers & cook 10 minutes, until browned & tender. Add garlic, crushed red pepper & ginger & stir fry 30 seconds. Add tofu & 2 T water. Cook 5 minutes. Add green onions & stir fry 30 seconds. Turn off heat & stir in soy & sesame oil. Serve over hot rice noodles & garnish with crushed peanuts.
