Garlic Chicken

2 chickens cut up Salt & pepper to taste 3 T olive oil 40 cloves garlic (yes, 40) 1 T minced fresh rosemary 1 T minced fresh thyme Zest of 2 lemons ¼ c white wine ¾ c chicken stock 3 T unsalted butter

Preheat oven to 400. Season chicken w/salt and pepper. Heat olive oil and sauté chicken 2-3 minutes each side. Put chicken on a plate and add garlic to pan: cook, stirring for 1 min. Place chicken in shallow casserole. Add rosemary, thyme, garlic and lemon zest to top of chicken. Cover bake 20 mins. Then baste w/juices. Continue roasting uncovered for 30 mins. Transfer chicken to platter and cover w/foil. Leave garlic and juices in pan. Over medium heat mash garlic, add wine and cook 3 mins. Add stock, cook stirring occasionally 5 mins. Whisk in butter a few pieces at a time. Transfer to sauceboat.
