Fillet of Fish Italiano

A Tasty Fish Dish


1# Tilapia fillets 1 medium onion sliced thin 1 shallot sliced thin 3 cloves garlic minced 1 14.5 can Italian seasoned diced tomatoes 1 2.5 can chopped black olives drained 1 tbsp. chopped parsley 1/2 cup white wine 1/4 cup sherry basil, oregano, and Italian seasoning to taste 2 tbsp. olive oil 1 tbsp. salted butter 1 dash thyme (or to taste)

In a 10 in. fry pan, add the olive oil and butter; heat over medium heat; add the garlic and saute until fragrant; add the shallot and onion and continue to saute until tender; add the diced tomatoes,parsley,seasonings,white wine and sherry; bring just to a boil, stirring occasionally; reduce heat and simmer for about 10 min.; place the fillets on top of the sauce and cover; allow the fish to poach turning occasionally; when the fish turns white the dish is ready to serve; place fillets on plates and spoon sauce over. If so desired, the entree can be served over cooked rice.
