Easy Bruschetta Chicken

4 Boneless Chicken Breast 1½ Cups White Rice Bruschetta Recipe: 5 Roma Tomatoes, diced 2 Garlic Cloves, minced ¼ Cup Olive Oil 1 teaspoon Coarse Sea Salt 1 Cup Crumbled Feta Cheese 2 tablespoon Fresh Basil, minced 4 tablespoon Cajun Seasoning

Cook rice; if you do not have a rice cooker, Wash and rinse the rice really well, until the water is clear. Place in a saucepan with double the amount of water and a little salt and stir once. Bring to the boil, then turn the heat all the way down and cover the pan tightly with a lid. Cook on the lowest heat possible for 10-15 mins without uncovering the pan. Or until fully cooked. *Optional* Tenderize the Chicken Breast before grilling it. Season the chicken with the cajun seasoning; about ½ tablespoon per side. Grill Boneless Chicken Breast in a skillet on medium; 5 to 6 minutes each side (Or until evenly cooked) Rinse and dice the tomatoes and place them in a microwavable medium mixing bowl. *Optional* Before placing them in your bowl drain the excess water and natural juice from the tomatoes.* Add garlic, olive oil, sea salt, 1 tablespoon of basil; mix together. Add feta cheese and microwave for 1 minute. Mix and add in the rest of the basil. Layer down your rice first, top it with your chicken breast, and then add your bruschetta.
