An easy and delicious “make-ahead-dinner” for the mom on the go
1 Lb Bulk mild Italian Sausage
1 Tbl Butter
¼ Cup Onion, minced
¼ Cup Green pepper, minced
½ Cup Fine dried bread crumbs
4 Tbl Grated parmesan cheese
½ Cup Mozzarella cheese, shredded
1 15 oz Container ricotta cheese
¼ Tsp Basil
½ Tsp Salt
⅛ Tsp Pepper

Preheat oven to 375º. Grease bottom and sides of 1½ quart round casserole dish.
In a medium skillet, cook the sausage on medium until cooked thru and brown. Drain and set aside. Add 1 tablespoon to skillet and cook the onion and pepper until tender. Remove skillet from heat and add cooked sausage, breadcrumbs, mixing well. Spoon mixture into the prepared casserole dish.
In a large bowl, combine cheeses, add basil, salt and pepper, add eggs (one at a time), beating well after each addition until thoroughly mixed.
Pour cheese mixture over meat layer in casserole, sprinkle with paprika. Bake 15 min or until cheese is golden. Remove from oven and cool 5-10 min for cheese to set.
**Note: 1 lb of cooked diced chicken, or 1 lb of hamburger may be substituted for sausage.
