Curried Chicken, Rice and Pineapple

Electric skillet meal.




1 cup long grain rice (not minute rice) 4 boneless chicken breasts or thighs (may use frozen) 1 - 8 oz. can crushed pineapple with liquid 1 teaspoon curry powder (more or less to taste) ½ cup raisins ½ cup pecans 2 cups water or broth

In electric skillet, place rice, curry powder and water. Arrange chicken over the rice. Spoon pineapple over the chicken pieces. Scatter raisins and pecans around the chicken, on top of the rice. Set thermostat to "simmer" and cook for 15 to 20 minutes (depending on cook time required for rice). Turn off and let set additional 5 minutes. Serve chicken, mix remaining ingredients and serve alongside the chicken.
