Great way to make a corned beef dinner. Especially nice if you have family that does not like cabbage - this gives you that traditional flavor, but without the cabbage.

Ingredients

1 corned beef roast, any size you like The season packet that comes with the beef About a tablespoon of Dijon mustard 1 can sauerkraut 1 can beer 1 onion, chopped into large chunks 5 or so medium golden potatoes, peeled and chopped into large chunks 5 or so carrots, peeled and chopped into about two inch long chunks Salt and Pepper Nonstick cooking spray Note: Work on chopping veggies after the roast goes in the pot to save time on the initial prep time.

Instructions

1.Spray stock pot with nonstick cooking spray – well coated 2.Rinse corned beef well and place in pot 3.Pour can of beer in pot 4.Sprinkle with seasoning packet that comes with beef 5.Spread about a tablespoon of Dijon mustard on top of beef 6.Drain sauerkraut and add to pot 7.Fill can a little less than half way with water and add to pot 8.Make sure kraut is evenly spread out in pot- around and on beef 9.Cover and cook on medium heat (60 min per pound of beef) 10.Chop onion, carrots, and potatoes and season with some salt and pepper 11.Add onion carrots and potatoes to beef for last 40 minutes of cooking time, cover and cook til done (ohhh does your kitchen start to smell good now!) When I add these I mix the pot just slightly so the juice and kraut were with the onion, carrot, potato mixture, but leave beef on bottom.
12.When time is up turn off and let sit in pot for at least 10 minutes 13.Put all on platter and let rest for at least 10 minutes 14.Serve!
