Cut ribs St Louis style. Peel off membrane. Rub both sides with spice rub. Place on 275 - 300 degree smoker with your choice of wood chips for 3 hours. Wrap in double foil bone side up, pouring vinegar sauce over ribs. Cook 2 hours in foil. Remove from foil & place on smoker for 1 hour, saucing last 30 minutes.
