2 refrigerated roasted Cornish hens (1¼ pounds each), each cut lengthwise in half 1 small lemon ¼ cup orange marmalade 2 teaspoon soy sauce
Preheat oven to 450 F. Place hens, skin-side up, in large roasting pan. Roast hens 20 min. Meanwhile, grate 1 teaspoon peel and squeeze 1 tablespoon juice from lemon. In 1 quart saucepan, heat lemon peel, lemon juice, orange marmalade, and soy sauce over low heat until marmalade melts.
