Ingredients

  • 2pounds whole chicken legs
  • 1teaspoon kosher salt
  • 1tablespoon olive oil
  • 1small onion, chopped
  • 3large garlic cloves, finely chopped
  • 4Roma (plum) tomatoes,
  • cored and chopped
  • 2tomatillos, waxy skin
  • removed, chopped
  • 2chipotle peppers in adobo sauce,
  • plus 1 tablespoon additional sauce
  • ½teaspoon dried Mexican oregano,
  • crumbled
  • pinch dried thyme
  • pinch dried marjoram
  • 1cup chicken broth, low sodium
  • 2tablespoons apple cider vinegar
  • corn tortillas, for serving
  • Fixings: torn fresh cilantro, minced
  • onion, cotija cheese, avocado and
  • lime wedges

Preparation

  1. 1. Pat the chicken with paper towels and season
  2. with 1 teaspoon salt.
  3. 2. Put the oil into the cooking pot of the
  4. Cuisinart® Multicooker. Select Sauté/Brown,
  5. set the temperature to High, and press Start.
  6. Once the unit is preheated and the oil is
  7. hot, add half the chicken pieces to the pot
  8. and brown on each side, 3 to 5 minutes.
  9. Remove and continue with the remaining
  10. pieces. Reserve chicken. Add the onion to
  11. the pot and cook for 3 to 5 minutes, stirring
  12. occasionally until translucent. Add the garlic
  13. and cook until fragrant, 2 to 3 minutes.
  14. Add the reserved chicken and drippings
  15. back to the pot, along with the remaining
  16. ingredients. Mix well. Bring to a simmer and
  17. end the function.
  18. 3. Secure the lid and select Slow Cook. Set the
  19. temperature to High, the time for 2 hours and
  20. 30 minutes, and press Start. When the time
  21. expires, press Stop and carefully open the lid.
  22. Remove the chicken from the pot and allow to
  23. rest until it is cool enough to touch.
  24. 4. While the chicken is cooling, select Reduce.
  25. Set the time for 15 minutes and press Start.
  26. Allow sauce to simmer until thickened.
  27. 5. Once chicken is cool, shred, discarding
  28. skin and bones. Add the chicken back to
  29. the reduced sauce. Press Stop and select
  30. Keep Warm, if desired. Mix well and season
  31. to taste.
  32. 6. Serve in corn tortillas topped with
  33. prepared fixings.
