Chicken Scampi

Chicken and Pasta Entree that takes less than 30 minutes from start to finish. Great served with a Caesar Salad with Honey Mustard dressing and garlic bread.


4 bonelss, skinless Chicken Breast 1 cup Olive Oil ¾ cup Butter (unsalted) 1 Tbs. Lemon Juice ½ cup Chopped Green Onion 2 Cloves Garlic (crushed) 1 Tbs. Parsley 1 Tbs. Oregano 1 Tbs. Basil 6 Tbs. Diced Tomatoes Salt (to taste) Crushed black Pepper (to taste) 1 Box of Angel Hair Pasta

Using a boiler, add 4 cups of water, 1 Tbs salt, and 1 Tbs olive oil. Bring water to a boil and add pasta. Reduce Heat Cook until the pasta is tender. Drain. While the water is heating for the pasta, chop chicken breasts into 1 inch cubes. Using a large skillet, add oil and butter. Heat until melted. Add seasonings, juice, onions, and tomatoes. Stir until well blended. Add chicken. Cook @ 325 uncovered for about 20 minutes or until chicken is tender. Cover with lid and reduce heat to simmer. Simmer for 10 - 15 minutes (stirring occasionally). Place pasta in a large serviing dish and top with the chicken scampi.
