Chicken breast rolled around breadcrumbs, herbs, spinach, feta cheese.

1 large boneless, skinless chicken breast. ½ c frozen spinach, thawed and well drained. 1T plain bread crumbs. 1T feta cheese. ¼ t. each dried, tarragon leaves, thyme, marjoram, rosemary, and salt. 1T butter, softened. ½ T dried onions.

Between sheets of plastic, pound chicken breast out to even thickness. Set aside. Mix all other ingredients in small bowl. Spread on chicken breast. Roll up starting along long side. Secure with toothpicks, if necessary. Place on pan lightly sprayed with cooking spray, seam-side down. Spread 1T softened butter over top Cover with foil and bake at 400 degrees (toaster oven works well here) for 20 minutes. Remove foil and cook additional 10-12 minutes until lightly browned. Let set approximately 10 minutes before serving.
