Cauliflower Au Gratin

Growing up it seems we had leftover Cauliflower Au Gratin around a lot. My Mum always made it at least once a week. Whenever I have it now it reminds me of her.

Ingredients

1 large head cauliflower broken into florets you can also mix with broccoli or other veggies 2 garlic cloves, minced 6 tablespoons butter, cubed 2 tablespoons all-purpose flour 1½ cups milk or ½ & ½ 4 bacon strips, cooked and crumbled or leftover ham (optional) 2 -3 medium onions sliced a small bunch of hot chilies chopped (optional) ¼ teaspoon. Nutmeg ¾ lb of assorted cheeses Sea salt & Pepper to taste

Instructions

Roast the Cauliflower in a 350 degree oven for 30 minutes just until it starts to brown on a cookie sheet. In another saucepan, saute garlic in butter for 1 minute. Stir in flour until blended; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Turn off the heat; stir in the cheese, salt, pepper and optional chilies. Put cauliflower over the sliced onions and optional bacon or ham in a baking dish. Pour over the cheese sauce. Bake, uncovered, at 400° for 25-35 minutes.
