Caribbean Grouper

A very fun, authentic Caribbean fish entree served with sliced ripe bananas, and covered in a sauce of pickapeppa, rum, and lime juice. Spicy, sweet, and robust flavors of the Caribbean that will take your mouth on a tropical vacation.




1-2 lbs grouper filet 1 large, ripe banana, peeled & sliced on the bias 1 bottle pickapeppa sauce 3oz Myers Dark Rum 1 lime, juiced 3 dashes of Angostura Bitters Salt and Pepper ½C milk

Prepare a large baking dish with non-stick spray. Add fish filet and pour milk over the filet. Season with salt & pepper and bake at 400 degrees, 20 minutes (or approx 7-8 mins. for each half pound of fish). While fish is baking, prepare in a sauce pan the pickapeppa sauce, lime juice, bitters, and rum. Heat at medium temperature, just until aromatic. When fish is cooked, remove from baking dish and set on serving platter. Arrange sliced bananas on top, and cover with pickapeppa sauce. You may also wish to provide individual dipping bowls of sauce with any unused sauce. Can be served with Curried Caribbean Rice recipe or other favorite side dish like fried yuca, mashed boniato, or plain white rice & beans.
