Beefy Burgers with a cajun twist topped with a sweet and smokey sauce.
1 pound ground beef
1 TBSP Worcestershire Sauce
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon Creole or Cajun seasoning
2-4 roasted Anaheim chili peppers, fresh or canned (or to suit your taste)
6 slices thick bacon diced into bite size pieces (helps to freeze the bacon slightly)
1 1/2 cups shredded cheese (I use pepper jack)
4 ciabatta rolls (lightly grilled or toasted)
4 slices pepper jack cheese
4 lettuce leaves
4 slices tomato
4 slices red onion

Preheat a grill or grill pan for high heat.
When the grill is hot, lightly oil the grate.
In a large bowl, mix all ingredients together until well blended, but don't over mix or the patties will get tough when cooked. Form patties about 3/4 inches thick.
Grill the patties for 8 to 10 minutes per side, or until meat is done to your liking, top with the sliced cheese.
Remove from grill and set aside for about 5 minutes before serving, so the juices can re-absorb.
Top with Smoking Chipotle Honey Sauce (recipe below)
1 canned chipotle pepper in adobo sauce
(about 1 of the peppers sliced and 1-2 tbsp of the sauce, start with one and add more if needed)
1/3 cup honey
2 tablespoons mayonnaise
2 tablespoons ketchup
1 tablespoon yellow mustard
Preparation of Smoking Chipotle Honey Sauce
To prepare sauce, mix ingredients in a blender or food processor
Set aside until ready to serve.
Serve the burgers with lettuce, tomato and red onion.
