1 whole roasted chicken 2 stalks celery ½ cup sour cream ½ cup mayonnaise 2 ea thyme sprigs chopped S&P 1.5 cup dried diced apricots ½ cup toasted slivered almonds 3 TB Dijon mustard 4 ea minced garlic cloves 1 bunch parsley, chopped ⅛ cup red wine vinegar
