American chop suey

American Chop Suey is a quick pasta dish that gets vegetables and protein into your kids when they're too excited about Halloween to eat anything else. But you dont want them starving. This smells great and gives them and you a hearty meal before a busy evening. My parents used to do this all the time.




1 fine diced onion 2-3 cloves of garlic (to scare away vampires) ½ chopped bell peppers 2 tablespoon olive oil salt/pepper to taste dash of basil, oregano & rosemary 1 lb extra lean ground beef (or ground turkey) 1 32oz can crushed tomatoes 1 lb dried pasta

Heat the olive oil in a saute pan for 1 minute and add the chopped onion, garlic & peppers. Those three items can all be chopped in a cuisinart food processor. Slice the onion and pepper in 4ths before adding so you don't have large chunks remaining. Saute vegetables for 5 minutes until they're beginning to appear cooked (translucent for the onions) Add mushrooms or anything else the kids might like or not even find (spinach, mushrooms or grated zuchini work great too) Season the aromatics with the dried herbs. You can use fresh herbs, but they have to be mixed into the simmering vegetables otherwise they will go black before they get mixed. Add the ground beef and season with salt & pepper. Cook until it starts to brown all over. Add the canned tomatoes, add more if your kids like lots of sauce. Meanwhile boil water to a rolling boil and cook the pasta according to the package directions. Once cooked, drain and add to the saute pan with the meat and vegetables. Season if it needs it. This can simmer for hours or be served right away.
