Adobo Chicken and Rice

Simple dish with a spice just right for the entire family. Perfect for the night you need to have dinner on the table quickly, yet would like five minutes to change and check email. You can make the sauce ahead of time and store it in the fridge.




1 Chipotle Pepper 1 Roasted Red Pepper 1 teaspoon Adobo Sauce 2 Tbl Honey 2 Tbl Brown Sugar 2 Garlic Cloves ½ c Chicken Broth ½ Orange Juice 3 Tbl Rice Vinegar 2 Tbl Lodo Red Adobo or Paprika 4 Boneless Skinless Chicken Breasts 2 Cups Cooked Brown Rice

1. Preheat oven to 375 2. Combine all of the ingredients in food processor, blender, or immersion blender. Blend until smooth. 3. Rinse chicken, pat dry and season with lodo red adobo or paprika 4. Brown chicken on both sides 5. Pour sauce over chicken and simmer for 10 minutes 6. Place in the oven and cook for 30 minutes or until juices run clean and sauce reduces 7. Serve over cooked brown rice
