Barbecue Bacon Meatloaf

Smoky, sweet, and robust flavors make up this ideal weeknight meatloaf.

Ingredients

  • 2 pounds ground beef chuck (15% fat)
  • ½ medium onion, grated on large holes of a box grater
  • 2 garlic cloves, finely chopped
  • ½ cup barbecue sauce, divided
  • ¾ cup low-sodium chicken broth
  • ¼ cup chopped fresh parsley
  • ⅔ cup panko breadcrumbs
  • ½ cup finely grated Parmesan
  • 1 tablespoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 2 large eggs 8 thin strips bacon

Preparation

  1. Combine ground beef, onion, garlic, ¼ cup of the barbecue sauce, chicken broth, parsley, breadcrumbs, Parmesan, salt, and pepper in a large mixing bowl, and stir to combine. Add the eggs and continue mixing until well blended.
  2. Pour ¾ cup water into the base of the basket (this will prevent smoking from the bacon). Insert the crisper plate. Transfer the ground beef mixture to the basket and form it into a loaf roughly 10 inches by 6 inches and 1½ inches thick. Drape the bacon over the ground beef, tucking the ends under the loaf.
  3. Slide the basket into the air fryer. Select Air Fry at 325°F for 40 minutes. Press Start/Stop. When time expires, baste the meatloaf with the remaining barbecue sauce and select Air Fry at 325°F for an additional 30 minutes, or until the internal temperature reaches 165°F.
  4. Remove the basket from the air fryer. Let the meatloaf rest for 10 to 15 minutes before slicing and serving.
