I liked the regular meatloaf I was always taught to make from the time I was little, that was just the way you make it, that's how I thought then. When I met my boyfriend, he made meatloaf this way but I added a few things to it. It was so good and different than the "traditional" way. Now that's the only way I make it!
Kim’s Non Traditional Meatloaf
2 lbs Lean Ground Beef
1 8oz bag of mixed Vegetables, thawed, I use Stir fry type but any will do
1 small can Mushrooms, drained
1 cup Italian Bread Crumbs
16 oz of your favorite Cheese, personally I like Sharp Cheddar or Bacon cheddar
1 egg
1 small Onion chopped finely
1/2 tsp Season salt
1/2 tsp Black pepper
Preheat oven to 375*F, Take thawed vegetables and drained mushrooms and grind up together in a food processor.

In a large bowl combine ground up vegetables, Ground beef, Bread crumbs, egg, Onion, pepper and salt. Mix well.

Divide mixture in 2 fairly equal parts, Put half of it in a loaf pay sprayed with cooking spray, slice or grated cheese. Put half the cheese on top of the first part of meat mixture then put the other half of meat mixture on top. Bake at 375 for 1 hour, half way through pour off any oil.

When the hour is up turn off the oven take loaf out and top with the rest of cheese and put back in oven till the cheese melts. Should not take but a few minutes, remove from oven and let cool for a bit, slice and enjoy!! The vegetables make this a very moist meatloaf.

Optional items to add, 1/2 cup bacon bits, small Bell pepper chopped or some extra shredded cheese to the meat mixture.
