Stuffed Marrow

My mom used to stuff marrow with a traditional sausage stuffing that you'd put in a turkey or chicken and serve with a poultry gravy and mashed potatoes or a traditional polish stuffed cabbage filling gulumpki with a simple tomato sauce."


1-2 large zucchini or 4-6 delicata squash split length wise and seeds scooped out.

Stuffing ingredients:

1 lb ground beef
1 lb ground pork
1 Tbl allspice
1 Tbl crushed red pepper
2 cloves of garlic crushed
1 large red onion small dice
2 stalks of Celery with leaves small dice
2 cups of cooked brown rice or 1 cup of grapenuts soaked in milk
2-3 eggs


Combine all ingredients by hand and stuff into the squash 'Canoes' open faced and roast for 45-60 minutes at 350 degrees in a large uncovered pan.

Remove from oven and top with your favorite spaghetti sauce or grated cheese.

Serve over pasta with Romano cheese and a nice salad.
