African Peanut Stew

Comfort food that is surprisingly creamy, smooth, and wonderful!"


One diced onion
One can diced tomatoes
One can red beans, drained
One cup peanut butter
One pound of potatoes


Peel & cut potatoes. Boil & drain. Set aside.

Sauté the onions, add tomatoes and beans cook until beans are soft. Then add peanut butter. Bring to a simmer, stirring often. Add the potatoes and stir well.
