Spicy 3-meat, 3-bean Guinness ChiliUser Submitted Recipe
The ingredients are outlined below in the preparation
Place 2lb cubed tri tip in container or bowl, add 3 bottles Guinness beer.
Brown 2lb ground sirloin; add to Guinness/meat mixture.
Take two packages of smoked beef sausage and cut into small cubes, add to Guinness/meat mixture.
Allow meats to soak for 4 hours in the refrigerator, covered, and then pour mixture into a stock pot on the stove.
Mix two 6 oz. cans of Tomato paste into Guinness/meat mixture until well blended.
Add the following spices to the pot:
1 Tablespoon Paprika
4 Tablespoons Ancho Chili Pepper
4 Tablespoons Chipotle Chili Pepper
6 Tablespoons Ground Cumin
1/2 Tablespoon Crushed Red Pepper
1 Teaspoon Pepper
The spices should create a thick pasty-like blend in the meats.
Add the following to the pot:
2 chopped Vidalia onions
Two 28oz. cans of Rotel Original Tomatoes and Green Chiles, drained
Two cans black beans, drained
Two cans pinto beans, drained
Two cans kidney beans, drained
Mix well, and cook over medium heat - stirring frequently for about 1-2 hours. Then, transfer to a crock pot and slowly simmer the chili on low for several hours or overnight.
