Broiled Asian ChickenUser Submitted Recipe
8 boneless skinless chicken breast tenderloins
2 cloves garlic, minced
4 green onions, chopped
approx 1 inch chunk of ginger root, peeled and sliced
3 tbsp soy sauce
3 tbsp balsamic vinegar
Set oven to broil.
Arrange chicken breast tenderloins on a cookie sheet that has been covered in aluminum foil. Sprinkle generously with garlic, green onion, and ginger. Drizzle with 2 tbsp each of the soy sauce and balsamic vinegar. Place on the middle rack of the oven and let the chicken broil for about 3-5 minutes, or until visibly golden in color.
Remove cookie sheet from the oven and turn over the chicken pieces. Scoop the garlic, onion, and ginger bits back onto the meat, and drizzle with the remaining soy sauce and balsamic vinegar. Return chicken to the oven and cook for another 3-5 minutes, or until chicken is visibly golden in color. Remove from oven and let cool for 2-3 minutes before serving.
(Note: you can also substitute a salmon filet for the chicken pieces, but it must be cooked skin side down for 7-15 minutes, or until it flakes when pierced with a fork)
