Mediterranean Spicy Egg and Veggies
Mediterranean Spicy Egg and Veggies dish."


1 Tbs. Olive oil
1 Large onion, chopped
1 Jalapeno (or similar) pepper
Dried chili flakes to taste
1 Tbs. Tomato Paste
Three large tomatoes, chopped
3 cloves garlic, sliced
salt and pepper to taste
1 Tbs. cumin
1 tsp. sugar
1/4 cup water
3 eggs


Heat oil in large frying pan, cook onion over medium heat until just soft.
Add tomato paste, Jalapeno, Chili, Tomatoes and garlic, cook 5-7 minutes, until lightly cooked.
Add salt and pepper to taste (I put 1.5 tsp. salt), cumin, sugar and water, bring back to a boil.
Beat one egg and mix into veggies, so it breaks into little white bits.
Add remaining eggs whole. grind some pepper on them. The eggs should nest in the sauce.
lower heat and close lid. cook 5-8 minutes for soft eggs, 10-15 for hard boiled. (I usually cook for 8).
Serve hot with pita bread.
