My mom, who died a bit over a year ago, at the age of 94, won the heart of my husband to be way back in our college years. He asked her to make this often, and whenever I make it, we enjoy fond memories of family time together.
Mom's Ragout
1 lb. Of lean round steak, 1/4 inch thick
(Cut this in strips, across the grain. This works best if meat is still partially frozen.)
6 - 8 slices of bacon, cut into 2 inch pieces, raw
3 medium potatoes, sliced.
2 medium sized onions, sliced.
2 - 3 medium sized carrots, sliced crosswise, thinly.
1/2- 1 cup of dry red wine, or as much as provides the amount of liquid desired.
Salt and pepper to taste.
Using a fairly deep, ovenproof casserole, cover the bottom of the casserole with a layer of bacon.
Cover the bacon with layers of the round steak until you have used it all.
Salt and pepper as you go.
Cover the round steak with layers of carrots and onions.
Cover all of this with layers of sliced potatoes.
Place the casserole in a 350 degree oven. Cook for at least 40 minutes, and then add the wine. Do not add totally cold wine; warm it for a bit in the microwave so that you do not break the casserole.
Cook the casserole for at least 15 minutes more. Test for doneness. Serve with a good tossed salad and good hearty bread.

This is comfort food, for sure!
