Chalupa Roast

This smells so good while cooking that it will drive you crazy! Delicious , mexican crockpot gameday meal."


3 to 4 # Roast
Chili Powder

1 chopped onion
2 1/2 cups dried pinto beans, rinsed
2 cans Rotel Tomatoes with Green Chilies
1 can Cream of Mushroom Soup
1 can chopped green chilies
2 tsp salt
2 tsp garlic powder
1 tsp oregano
1 tsp cumin
1 cup water


Coat all side of Roast with chili powder and place in bottom of a large Crock Pot. Add remaining ingredients in the order listed above. (Canned pintos can be used, add 1 hr before serving and cut water to 1/2 cup. I have never used canned beans) Cook for 10 hrs on low or 9 hrs on high. New cookers will be hotter. An older cooker may take up to 16 hrs on med heat. You know how your cooker cooks.
DO NOT lift lid or stir until ready to serve. The roast will fall apart and shred. Serve on flour tortillas with sour cream and cheese as burritos, or put tortilla chips in soup bowl, then put the roast mixture and top with chalupa toppings, lettuce/tomatoes/black olives/ salsa/onions/ sour cream, whatever you desire.
