Portobello Fajitas


3 Portobello Mushrooms
2 TBS Olive Oil
Salt & Pepper to taste
8 Small Flour Tortillas
1/4 Red Bell Pepper
1/4 Yellow Bell Pepper
2 Avocados
1/4 Cup Light Mayo
1 tsp Chili Powder
Salsa Verde - to garnish
Cilantro - to garnish


Brush 3 Portobello mushrooms and 1 quartered red & 1 quartered yellow bell peppers with 2 tbs olive oil. Sprinkle with salt and pepper. Stack 8 small flour tortillas and wrap in foil. Grill Portobellos, peppers, and tortilla packet directly over med heat 8 – 10 minutes, turning once halfway through. Meanwhile, in a bowl mash 1 avocado with 1/4 cup light mayo, 1 tsp chili powder, and salt and pepper to taste. Slice 1 additional avocado. Cut grilled veggies into strips. Pile onto warm tortillas with sliced avocado, mashed avocado mayo, salsa verde and cilantro.
