Ranch Chicken

great dinner for two


2 chicken breast (boneless, skinless)
1/4 cup ranch dressing
1/4 bread crumbs
salt and fresh pepper
olive oil
vegetable oil


First remove the chicken breast from the fridge and let it sit at room temperature for 15 minutes.
Then rinse the breast with cool water and pat them dry with paper towels.
Brush olive oil on both sides of the breast, then brush ranch on both sides. then season the breast with salt and pepper.
Place bread crumbs in a sealable bag and coat both sides of the breast. Be generous.
Heat some vegetable oil in a non-stick skillet over medium-high heat.
Cook the breast for 7 minutes each side. until cooked through. (if the bread crumbs brown too much, put them in the oven at 450 for 5 to 10 minutes)
Let the chicken breast rest on a plate for 5 more minutes, so all the juices stay locked in.
