Pot Roast


2½ lbs. Beef (roast)
2 tbsp of olive oil
1 cup of water
¾ cup black coffee
1 cup of tomatoes (chopped)
1 onion (sliced)
5 carrots
2 cups of potatoes
Salt and pepper to taste


Brown meat on all sides in olive oil. Pour water and coffee over roast. Add salt and pepper. Bring to a brisk boil. Reduce heat and simmer 40 minutes. Add tomatoes, onion and carrots. Simmer 20 minutes. Add potatoes and simmer until vegetables are tender.
