Fantastic seafood dish that includes fish, shrimp and crabmeat. This has become my No. 1 Requested dish for Thanksgiving, Christmas & Birthdays!
Granny Jan's Seafood Supreme
1 stick butter or margarine, melted
1 lg onion, diced
4 stalks celery, diced
1 lg bell pepper, diced
1/4 c. parsley, chopped
2 lbs. shrimp, peeled & deveined
1 lb. dark crab meat, picked clean
3 boxes cornbread stuffing mix (or 2 pans cornbread, crumbled)
3 Tlbs prepared horseradish
4 Tbls Worcestershire sauce
2 Tbls Mrs Dash Table Blend
2 Tbls lemon juice
1 Tbls onion powder
1 Tbls garlic powder
2 lg eggs, beaten
8 oz shredded sharp cheddar cheese, divided
8 oz shredded mozzarella cheese, divided
4 to 6 cups chicken broth or stock
4 lg fish filets (Flounder, Grouper or Snapper)
4 Tbls butter or margarine, broken into pieces
Salt, pepper, Mrs. Dash & garlic powder (for fish filets)
Lemon slices for garnish
In large skillet, melt butter. Add onion, celery, bell pepper & parsley. Saute until onion & celery are translucent. Add shrimp; cook just until shrimp turn pink. In large mixing bowl, combine stuffing mix, sauteed vegetables & shrimp. Add horseradish, Worcestershire sauce, Mrs. Dash, lemon juice, onion powder, garlic powder, eggs, & 4 oz. each of cheeses. Mix well. Gently stir in crab meat. Gradually add chicken broth until all ingredients are well moistened (slightly soupy). Pour mixture into a sprayed 13 x 9 inch pan. Place fish filets on top of mixture. Liberally sprinkle filets with salt, pepper, Mrs. Dash & garlic powder. Place broken up butter on filets. Preheat oven to 350 degrees. Bake for 25 to 30 minutes, until stuffing mixture bubbles around edges and fish filets flake easily with fork. Add remaining cheesed & continue to bake until melted. Remove from oven & place lemon slices on top of filets
