Cilantro lime chicken with roasted red peppers

An easy, healthy, colorful and delicious chicken recipe. Perfect for dinner parties, barbecue, and family gathering. Serve with corn on the cob and chipotle lime butter. "


Chicken breasts
5 red and yellow peppers
3 onions
1 cup of water
Salt to taste
3 cups of cilantro
3 garlic cloves
1 lime juice and zest
1/3 cup of olive oil


In a food processor, mix the cilantro, garlic, oil, lime juice and zest. Add a dash of salt.
Rub on chicken, and let it marinate for 30 minutes. In the meantime, julienne onions and peppers.
In a dish, place your chicken, onions and peppers and cook on 375 for 45 minutes till the chicken juices run clear. Check on your peppers and onions, stir if needed.
