Spam Succotash
INGREDIENTS
1 medium yellow onion diced
1 can (12 oz.) Spam Classic cut into 1/2 inch dice
Two cups long grain rice
4 cups of water or broth
cooking spray
2 cans (14 oz) green peas (drained)
Black pepper
Instructions
Boil 4 cups water for rice
Add rice and return to boil
Reduce heat and simmer until all moisture is absorbed
Coat skillet with cooking spray
Saute onion until opaque
Add Spam dice and saute until browned
Add cooked rice and peas to Spam and stir until well blended
Black pepper to taste
