¼ cup olive oil
2 tsp red pepper flakes
1 clove garlic minced
½ tsp dried basil
¼ tsp dried oregano
½ tsp dried parsley
1 tbsp shredded parmesan cheese
Salt and pepper to taste
1 large chicken breast or 2 small chicken breast
½ lb angel hair pasta
Preheat oven 400 degrees.
Salt and pepper chicken breast return to refrigerator covered while oven is preheating.
Allow chicken to cook for about 30 minutes or until cooked thoroughly. Once the chicken has finished baking, bring a pot of well salted water to a boil. Start to cook pasta. Allow cooking for 8- 10minutes should be al dente. Slice chicken into strips.
In a large skillet heat olive oil over medium/high heat, add red pepper flakes, basil, oregano, parsley, bring heat down to medium/low heat. Allow red pepper flakes to infuse olive oil, continuously stirring so not to burn, about 2 minutes. Add garlic, salt and pepper. Allow garlic to cook for 1 minute. Add chicken and drained pasta toss well coating. Serve in large pasta dish garnish with parmesan cheese
