Hamburger EnchiladasUser Submitted Recipe
1 lb. hamburger (beef or turkey)
Taco seasoning, (or cilantro, chili powder and garlic pepper)
Large can crushed tomatoes
Pepper Jack cheese
1 package flour tortillas
Preheat oven at 350°
Brown the hamburger in a large sauce pan, and add seasonings to taste.
After hamburger is browned, add can of crushed tomatoes. Heat until hot.
Spray square cooking pan with olive oil, and put in a tortilla in the pan. Fill center with the burger/tomato mixture and top with grated or sliced pieces of both cheeses. Roll the filled tortilla making sure the end is on the underneath side. Continue this procedure of filling tortillas and rolling them until the pan is filled, and there is still some of the burger/tomato mixture in the sauce pan. Pour remaining sauce over the rolled, filled tortillas so they are covered. If there isn’t enough sauce, can add water to what is in the pan to make enough to cover the tortillas. Then slice or grate cheeses over top of the rolled tortillas in the pan.
Bake for approximately 30 minutes, and the cheese is well melted. (Cheese could also be lightly browned.)
Remove pan from oven, and remove the enchiladas very carefully from the pan.
