Chicken Splendido


3 Tbsp flour
2 tsp lemon pepper
4 boneless, skinless chicken breast (trimmed)
2 Tbsp oil
1 Tbsp olive oil
1 tsp chopped garlic
salt and pepper
2-3 diced tomatoes
1/2 c pine nuts


Place flour and lemon pepper in a plastic bag. Flour chicken one at a time, can sprinkle some lemon pepper directly on chicken prior to flour, if desired.
Heat skillet with oil on med-high temperature. After skillet is hot place chicken in skillet and brown it, cooking approximately 1 minute per side. Remove chicken and place on broiling pan in a preheated oven at 350*. Bake until done approximately 20-30 minutes.
In the same skillet used prior add some or all olive oil, garlic salt, pepper and diced tomatoes. Stir to mix and let it cook approximately 10 minutes on medium to medium low heat, add pine nuts and cover for last 5(ish) minutes.
Place chicken on serving plate and spoon tomato mixture over chicken and serve.
