Aigre-doux Pimente Pork Roast

Tomato based sweet sauce with a slight hint of spiciness basted every 30 minutes over oven roasted port roast. "


1 8-10 lb. pork roast
1 c. light brown sugar
1 T. salt
1 T. coarse ground black pepper
1 qt. canned tomatoes
3 onions, sliced
1 T. Tabasco sauce
1 c. ketchup
1 c. water


Rub pork thoroughly with sugar, salt and pepper; place in roaster. Mix tomatoes, ketchup, water and Tabasco and pour over the roast. Top with sliced onions. Bake covered at 350 degrees for 3 and ½ hours, basting every 30 minutes.
