Italian Pork Roast



6-8 lbs. boneless pork loin, tied
1/2 cup chopped fresh dill
5 large cloves minced garlic
2 Tablespoons Black Pepper
1 Tablespoon Kosher Salt
Olive Oil


Wash pork loin and dry thoroughly with paper toweling.
Rub all over with about 2 Tablespoons regular Olive Oil.
Sprinkle seasonings all over loin.
Evenly distribute minced garlic and chopped fresh dill on top and sides of the pork loin.
Preheat oven to 350 degrees. Place prepared loin in a deep roasting pan on a cooling rack. Place about 2 cups of water on the bottom of the pan.
Cover with lid and roast about 2-1/2 to 3 hours or until internal temperature registers 170 degrees
Remove from roasting pan onto a platter. Cover with foil and let rest about 20 minutes before serving.
Slice about 1/4" thick and place on serving plate.
The idea of placing water in the pan is to create steam thereby allowing the roast to stay moist.
